New Horizons for Young Women's philosophy has always supported educating teenage girls about the mind-body connection and the fusion of both Eastern and Western philosophies. New Horizons role, as a short term assessment program, is to evaluate and educate our student's on their mental and physical health in order to assist in determining what environment is needed after our program for her long term success and growth.

New Horizons understand the proven effect nourishment has on the physical body and mental health. In the past, New Horizons has been utilizing our organic certified garden and whole foods while following the NOLS (National Outdoor Leadership School) Nutrition Field Guide, NOLS Cookery and Diabetic Nurses for our nutritional and training needs. We feel so strongly about the mind-body connection that this year we are going one step further in wilderness therapy!

Registered Dietician Mary Howley Ryan, MS, RD and her company Beyond Broccoli have joined New Horizons for Young Women to perform the following:



  • Menu Reviews - Nutritional assessment and computerized analysis of all recipes used, analysis of each daily and weekly menu including the averages for all major nutrients, and an overall review of how nutrients are distributed throughout the day (meal pattern). Recommendations for change or confirmation of maintaining current menus are based upon nutritional needs for backcountry activities, growth, and balancing emotional connections to food.


  • Staff Nutrition Training - Nutrition class syllabus for continued staff training.


  • Ongoing Nutrition Education - A quarterly nutrition newsletter, NOURISHMENT NEWS, that addresses staff, student, parent, referring professionals and industry questions and concerns with updated nutrition information related to both the wilderness and therapy components of the New Horizons program. This is available to staff, students, parents, referring professionals and industry colleagues of New Horizons. Beyond Broccoli is also available to New Horizons for Young Women for ongoing nutrition questions and consultations regarding special dietary needs of individual students.



In the effort to support sharing important nutrition knowledge, New Horizons would appreciate any questions on nutrition in wilderness therapy and will try to answer all of them either via email or in our newsletter NOURISHMENT NEWS.
